【Abstract】 In recent years, the consumption of sweetpotato as food has been increasing. Consumers pay more and more attention to the quality and safety of sweetpotato besides its nutritional value. A review of literatures on quality and safety assessment of sweetpotato was provided from three aspects: accumulation of heavy metals, pesticide residues and generation of microbial toxins. It provides theoretical reference for understanding the regularities of pollutant absorption, transfer, accumulation and degradation, and formulating comprehensive approaches to reduce food risk.更多还原
