深圳市食品中重金属铅、镉监测结果的探讨

【摘要】 目的分析2017—2018年深圳市部分市售食品中重金属铅、镉监测结果。方法依据相关国家标准对2017—2018年期间在深圳市范围内便民服务点、超市、农贸市场等食品销售点所销售的部分食品中重金属铅、镉元素含量监测。结果 2017年,铅、镉检出率分别为94.00%、70.50%,2018年检出率为83.50%、97.00%。食品中铅检出结果,薯条超标大约0.4倍,其次为茶叶、爆米花、鸡肝、猪肝等。共监测9类食品200份,该次检测茶叶、新鲜蔬菜、面粉、小麦、稻谷、猪肾、猪肝等部分,猪肾中镉含量超标0.8倍,其次为猪肝、鲜食用菌、小麦。结论经分析,总体来看,深圳市食品中含重金属铅、镉较轻,但肉制品、谷物中镉、铅,油条、馒头等米面熟制食物中铅含量较高,相关部门需加强监管,确保人民健康。

【Abstract】 Objective To study the monitoring results of some heavy metals in some foods in Shenzhen. Methods According to the provisions of the Implementation Plan of Food Safety Risk Monitoring in China, the contents of heavy metals in some foods sold in convenience service points, supermarkets, agricultural markets and other food outlets in Shenzhen were monitored and analyzed. Results In 2017, the detection rates of lead and cadmium were 94% and 70.50%, respectively. In 2018,the detection rates were 83.50% and 97%. The results of lead detection in food showed that French fries exceeded the standard by about 0.4 times, followed by tea, popcorn, chicken liver and pig liver. A total of 200 samples and 9 kinds of food were monitored. Cadmium was detected in tea, fresh vegetables, flour, wheat, rice, pig kidney and pig liver. The content of cadmium in pig kidney exceeded the standard by 0.8 times, followed by pig liver, fresh edible fungi and wheat. Conclusion According to the analysis, the heavy metals in food in Shenzhen are relatively light, but cadmium and lead in meat products, cereals, fried dough sticks, steamed bread and other cooked rice noodles are relatively high. The relevant departments need to strengthen monitoring to ensure people’s health.
