【摘要】 本文主要研究了DENBA+静电场技术(输出电压2 200 V和3 400 V)对猪肉冻结、解冻速率、猪肉嫩度和蛋白质氧化等品质变化,以及冷藏猪肉菌落总数的影响。结果表明,DENBA+静电场处理可以提高猪肉冻结速率,使解冻时间减少一半,挥发性盐基氮、脂肪氧化速率和嫩度降低,蛋白质氧化速率增加,电场处理可以减少冷藏猪肉菌落总数。

【Abstract】 The article mainly studies the quality changes of frozen pork such as freezing, thawing rate, tenderness and protein oxidation, and the total number of colonies of refrigerated pork by DENBA + electrostatic field technology(output voltage 2 200 V and 3 400 V). The results showed that DENBA + electrostatic field treatment can increase the freezing rate of pork by about 20%, reduce the thawing time by half, decrease the oxidation rate and tenderness of volatile base nitrogen, fat, and increase the oxidation rate of protein. Electric field treatment can reduce the total number of cold-stored pork colonies.
