【摘要】 为明确明月草营养成分及进行营养评价,以明月草叶为原料,测定其常规理化成分及活性物质含量。结果表明,明月草中的蛋白质、可溶性蛋白含量分别为13.23±0.49 mg/g,1.98%±0.04%,脂肪含量为0.33%±0.02%;矿物质中的钙、铁、锰含量分别为1.900%±0.043%,462±18.4 mg/g,246±8.3 mg/g,均高于韭菜、生菜、菠菜3种蔬菜。多酚和黄酮的含量分别为0.586±0.031 mg/g,0.417±0.024 mg/g,具有较高抗氧化能力,且维生素含量丰富。明月草营养活性成分分析可为其食品开发及应用提供有一定的参考。更多还原

【Abstract】 The physicochemical components were measured and the nutritional evaluation was carried out using Gynura divaricata leaves as raw materials in order to clarify the nutritional composition of Gynura divaricata,and carry out nutritional eval uation. The results showed that the content of protein and soluble protein in Gynura divaricata leaves were 13.23±0.49 mg/g,1.98%±0.04%,fat content was 0.33%±0.02%,and the contents of calcium,iron and manganese in minerals were 1.900%±0.043%,respectively. 462±18.4 mg/g and 246±8.3 mg/g,which were higher than three kinds of vegetables,namely leek,lettuce and spinach. The contents of polyphenols and flavonoids were 0.586±0.031 mg/g and 0.417±0.024 mg/g,respectively,with high antioxidant potential and abundant vitamin content. The analysis of the nutritive active ingredients can provide some reference for food development and application.更多还原
