【摘要】 以石门核桃品种‘魁香’为研究对象‘,辽宁1号’为对照,分析比较坚果性状、蛋白质、脂肪、矿质元素及脂肪酸含量。结果表明‘:魁香’坚果外形美观,种仁风味香而不涩,脂肪和碳水化合物含量显著高于对照。矿质元素中‘,魁香’的钾含量极显著高于‘辽宁1号’,磷、镁、铁元素无显著差异。‘魁香’的亚油酸含量为466.9g/kg,极显著高于‘辽宁1号’,油酸含量显著低于‘辽宁1号’,其他脂肪酸含量无显著差异。综上所述‘,魁香’坚果香而不涩,脂肪、亚油酸和钾含量丰富,具有较好的发展潜力。更多还原

【Abstract】 Taking ‘Kuixiang’,a cultivar of Shimen walnut,for research object,the cultivar of ‘Liaoning No.1’as control. Nut traits and the content of protein,fat,mineral elements and fatty acid were compared. The results showed that‘Kuixiang’had beautiful nut appearance and kernel with mellow taste. The content of fat and carbohydrate of which was significantly higher than that of Liaoning No.1(P<0.05). Among the mineral elements‘,Kuixiang’had significantly higher potassium content than Liaoning No. 1(P <0.01),but no significant difference in phosphorus,magnesium and iron. The content of linoleic acid in‘Kuixiang’was 466.9 g/kg,which was significantly higher than that of Liaoning 1(P<0.01),and the content of oleic acid was significantly lower than that of‘Liaoning1’(P<0.05),while the content of other fatty acids had no significant difference.
