甘肃陇南六种茶叶生化成分及微量元素分析

【摘要】 采用恒重法、比色法及电感耦合等离子体原子发射光谱法(ICP-OES)首次分析比较了甘肃陇南6种茶叶生化成分含量及4种微量元素的溶出特性。结果表明:陇南6种茶叶中游离氨基酸含量为1.88%~4.44%,可溶性多糖含量为3.61%~6.31%,茶多酚含量为19.24%~26.01%,除老鹰茶不含咖啡碱外,其他茶叶咖啡碱含量为2.67%~3.09%;4种微量元素的平均溶出率为Zn>Mn>Cu>Fe。通过对不同品种陇南茶主要生化成分和微量元素分析发现,陇南茶富含人体所需的多种营养成分,但不同品种茶之间各成分相对含量存在明显差异。

【Abstract】 The biochemical composition and extracting characteristics of trace metal elements of six varieties of tea from Longnan,Gansu Province were analyzed and compared for the first time by constant weight method,colorimetry and inductively coupled plasma atomic emission spectrometry method(ICP-OES).The results show that in the six varieties of tea,the content of free amino acids was 1.88%~4.44%;the content of soluble polysaccharides was 3.61%~6.31%;the content of polyphenols was 19.24%~26.01%. Except that the HAWK tea does not contain caffeine,the caffeine content in other tea varieties was 2.67%~3.09%. The order of the average dissolution rate of 4 trace metal elements in tea water was Zn>Mn>Cu>Fe.By comparative analysis of biochemical components and trace elements in different varieties of tea from Longnan,it was found that Longnan tea was rich in multifarious nutrients,but there is obvious difference among different varieties of tea in terms of relative content of each component.
