高还原力及脂肪酶酶活樱桃酵素生产工艺优化
Process optimization of cherry enzyme with high reducing power and lipase activity
【摘要】 樱桃酵素含有丰富的营养物质,其中的脂肪酶和还原性物质能调节体内脂类代谢,有效地预防脂肪肝等病症。该试验以樱桃酵素的脂肪酶酶活和还原力为考察指标,通过单因素试验和正交试验优化了樱桃酵素的发酵条件。结果表明,樱桃酵素最佳发酵条件为复合酶添加量300 U/g、接种量15%、加糖量(樱桃果浆∶白砂糖质量比)为3∶1、发酵时间4 d;在此条件下,樱桃酵素的脂肪酶酶活可达到1 242 U/m L,还原力相当于1.63 mg/m L VC标准溶液,此时樱桃酵素呈浅橙黄色、透明,带有樱桃香气和淡淡的酒香。
【Abstract】 Cherry enzyme is rich in nutrition,in which lipase and reducing material can effectively regulate lipid metabolism,and can effectively prevent fatty liver disease.In this study,using lipase activity and reducing power of cherry enzyme as investigate indexes,the fermentation parameters of cherry enzyme were optimized by single factor and orthogonal experiments.The results showed that the optimized cherry enzyme fermentation condition was compound enzyme addition 300 U/g,inoculum 15%,sugar addition(cherry pulp ∶ white granulated sugar) 3∶1(g∶g),fermentation time 4 d.Under the optimized fermentation conditions,the lipase activity was 1 242 U/ml and reducing power was 1.63 mg/ml VC standard solution equivalent.The cherry enzyme was light orange color and transparent with cherry aromas and hints of wine.
