【摘要】 目的掌握宿迁市流动摊贩食品中化学污染物污染状况。方法在全市范围内以随机购买的方式获得7类,291个样品,并对其有害金属元素、食品添加剂、农药残留、兽药残留、违禁药物、纸质食品包装材料中荧光增白剂等污染物进行检测。结果 291份样本中,不合格样品14份,总样品超标率为4.8%。蔬菜中铅超标率为2.4%、农药残留超标率1.4%,面制品中含铝食品添加剂超标率13.3%,绿豆芽中吲哚乙酸超标率高达37.5%,油炸及烧烤食品中苯并(a)芘超标率6.7%。结论宿迁市流动摊贩食品污染水平总体较低,但部分食品仍存在污染,应采取针对性措施,以提高食品安全性。更多还原

【Abstract】 Objective To investigate the chemical contamination status of street food in Suqian. Methods 270 street food samples in 7 categories were bought at random across the city,and their harmful metal elements,food additives,pesticide residue,veterinary drug residue and fluorescent whitening agents in food package paper were tested. Results 291 samples were tested in total,and the unqualified rate was 4. 8%( 14/291). The exceeding limit rates were 2. 4% for lead and 1. 4% for pesticide residue in vegetables. And the exceeding limit rates were 13. 3% for food additives containing aluminum in flour products,37. 5% for indole acetic acid in mung bean sprout and 6. 7% for benzopyrene in fried and barbecued foods.Conclusion Chemical contamination of street food is at a low level overall,while severe contamination is detected in several categories of food.
