壳聚糖-多酚共聚物的绿色制备、特性及应用研究进展

【摘要】 壳聚糖具备很多对人体有利的生物活性,是一种功能生物高聚物。近年来,通过安全绿色的自由基接枝反应,将多酚化合物引入壳聚糖分子,以进一步增强其生物活性而备受关注。获得的壳聚糖-多酚共聚物抗氧化活性显著增强,抗菌性能也得到提高,在食品及医药领域具有良好的应用潜力。综述了壳聚糖-多酚共聚物的绿色制备、特性及应用研究进展。

【Abstract】 Chitosan, which has various beneficial bioactivities on human health, is an excellent functional biopolymer. In recent years, to further strengthen its biological properties, introduction of polyphenols onto chitosan by free-radical grafting reaction, a safe and green procedure, has received many attentions. The resulting chitosan-polyphenol copolymers can enhance antioxidant capacity. The antimicrobial activity of chitosan-polyphenol copolymers is also improved. Thus, chitosan-polyphenol copolymers have great potential in the fields of food and medicine. Progress in green preparation, properties, and applications of chitosan-polyphenol copolymers was summarized.
