【Abstract】 In this study, the fermentation processing of glycyrrhiza solution fermented by yeast was optimized by single-factor and orthogonal tests. The results showed that the best processing conditions were as follows: temperature 40℃, time 3 h, the substrate concentration 20%, glucose concentration 5%, and yeast 2%. The concentration of ethanol was 2.57% under this combination condition.更多还原
