丰谷酒业酿酒区域空气中微生物分布状况的研究

【摘要】 通过丰谷酒业酿酒区域空气中不同季节、不同位置以及夏季停产前后微生物分布情况的研究,表明丰谷酒业酿酒区域空气中已形成了一定的微生态体系。在车间内这一适宜酿酒微生物生长繁殖的环境中,经过长年累月的生产过程进行筛选,淘汰了不适应酿酒环境的微生物,而适应酿酒环境的微生物得以生存繁衍下来。从而形成了由优势微生物种群占据主导地位、比较固定的微生态体系,该微生态体系对促进糟醅正常发酵和丰谷酒体特征的形成具有重要作用。

【Abstract】 Through the Study on the distribution of microbes in different seasons,locations and summer shutdown form the air of Forgood Distillery Co.Ltd,it indicates that there has been a certain the micro-ecosystem in the air of Forgood Distillery Co.Ltd.In the environment which is suitable for the growth and reproduction of the liquor-making microbes in the workshop, screening through a long period of production, elimination of microbes that do not adapt to the liquor-making environment, microbes that adapt to the brewing environment survive and reproduce.Thus forming a relatively dominant microbes system dominated by dominant the micro-ecosystem, the micro-ecosystem plays an important role in promoting the normal fermentation of brewing lees and the formation of Forgood liquor characteristics.
