“7S”与HACCP联合在高校食堂安全管理中的应用研究

【摘要】 通过探讨"7S"管理模式与HACCP结合在高校食堂安全管理中的应用效果。以皖西学院部分食堂为研究对象,于2017年1—6月进行"7S"管理和危害分析与关键控制点(HACCP)模式应用,根据实施效果,依据Design Expert 8.0.6软件对实施效果的数据进行响应面分析。分析二次回归方程结果表明,中试模型具有显著差异,p值为0.018 2<0.05,由交互作用的3D图形可以看出,联合管理模型使得从业人员、食堂食物留样合格率极显著,主辅料仓库的卫生问题、米饭质量及餐具清洗消毒合格率显著,荤素菜粗细加工在此次联合管理下合格率不显著,需要进一步根据学校食堂实际情况作出整改。总之,皖西学院食堂建立"7S"与HACCP联合管理模式具有提高食堂餐饮食品安全的作用,值得在其他兄弟院校食堂进行推广和应用。

【Abstract】 Adopt to explore the application effect of 7S with hazard analysis and critical control point(HACCP) mangement model on food safety of colleges and universities the West Anhui University canteen were selected as the research objects. The management models of 7S and HACCP were bound and implemented from January to June in 2017,According to the implementation results,based on the actual data of Design Expert 8.0.6 software on the effect of the implementation of response surface analysis. Results the pilot model has significant difference,p value was 0.018 2<0.05,by the interaction of 3D graphics can be seen. The united management made employee food sample pass rate significantly,Hygienic problems of main and auxiliary warehouse,rice quality and tableware cleaning and disinfection pass rate significantly. The thickness of processed meat and vegetables the qualified rate was not significant. Further changes were required. Conclusion Establishment of " 7S" and"HACCP"management binding model by West Anhui University canteen is beneficial to remarkably improve the whole level of food safety,which worthy promotion and application in food safety management in colleges and universities.
