【摘要】 主要概述了拉曼光谱在食用油鉴别及检测领域中3个方面的研究。在技术方面,拉曼光谱改善了其他传统分析方法的耗时、预处理复杂和检测样品过程中易损坏的缺点;在仪器方面,拉曼光谱仪器主要向手持式、便携式拉曼仪的发展;在应用方面,拉曼光谱技术主要应用在大豆原油掺伪和地沟油鉴定方面。

【Abstract】 Three aspects of Raman spectroscopy in the field of edible oil identification and inspection were summarized,. In terms of technology compared with other traditional methods of analysis, Raman spectroscopy improved time, pre-processing complex and easy to detect defects in the process of testing. In terms of instrumentation, Raman spectroscopy was widely developed for handheld, portable Raman instruments. In the application, the Raman spectroscopy technology was mainly applied in soybean crude oil adulteration and waste oil identifi cation.
