【摘要】 根据"食品工程原理"实验课程的教学特点,以培养学生的实验操作、工程设计和计算等工程意识和能力,以及提高其综合素质等为目标,开展了食品工程原理实验教学环节的改革研究。首先分析了"食品工程原理"实验教学中存在的实验开出项目单一死板、不能全面综合考核评价学生实验成绩等主要问题,进一步阐述了实验教学的具体改革办法,包括实验教学项目的设计、加强学生为主导的实验教学组织、以及实验报告与实验考核综合评定等,总体上取得了较好的教学效果。更多还原

【Abstract】 According to the characteristics of experiment course of the principle of food engineering,to cultivate students’ engineering quality including experimental operation,engineering design and calculation etc.,and improve student’s comprehensive abilities,the experimental teaching innovation was carried out. In this study,we analyzed the main problems existing in principle of food engineering experimental teaching,which includes the experiment items are single and short of flexible,the experimental scores can’t be comprehensively evaluated,then further put forward the specific reform solutions for improving the experimental teaching quality,including the determination of contents for the experiment,the experimental teaching organization and reforming the traditional examination mode,the better teaching effect was almost achieved eventually.更多还原
