番茄红素胶束与番茄红素原料稳定性对比研究
Contrastive study on stabilities of lycopene micelles and lycopene
【摘要】 目的对比研究番茄红素胶束与番茄红素原料的稳定性。方法以番茄红素的保存率为考察指标,考察了温度、光照、金属阳离子、酸、碱、氧化剂、还原剂对番茄红素胶束及番茄红素原料稳定性的影响。结果光照、Fe3+、温度、酸、氧化剂对番茄红素胶束及番茄红素原料的稳定性影响较大,尤其是在紫外光和Fe3+条件下放置24h,番茄红素胶束中番茄红素的保存率分别降至5%和30%以下;碱、还原剂及金属离子Na+、Ca2+、Mg2+、Zn2+对番茄红素胶束及原料的稳定性影响相对较小。结论将番茄红素包载于聚合物胶束中,可明显提高番茄红素的稳定性,但应注意在制备和储存番茄红素原料及胶束过程中,避免使用含铁的金属容器,并在低温(28℃)避光条件下储存。
【Abstract】 Objective Comparative study on the stability of lycopene micelles and lycopene.Methods The effects on stability of lycopene micelles and lycopene by temperature,light,metal cations,acid,alkali,oxidant,reductant were studied through measuring the preservation ratio of lycopene.Results The light,Fe3+,temperature,acid,and oxidan markedly effected the stability of lycopene.Especially under UV and Fe3+for 24 hours,the preservation ratio of lycopene was dropped to below 5%and 30%separately.While the effects on stability of alkali,reductant and metal cations such as Na+、Ca2+,Mg2+,Zn2+were comparatively less.Conclusion The stability of lycopene in polymeric micelles was improved obviously.But iron metal containers shouldn’t be used when lycopene and lycopene micelles were prepared and stored,and they should be kept at low temperature(2-8℃).
