【Abstract】 Eurotium cristatum is the dominant fungus in the fermentation of ’ Fu-brick’ tea. The quantity and quality of E. cristatum are directly related to the quality of brick tea.Extensive studies had been done.We review the researches in the isolation and identification,molecular biology,cultivation,growing process of the so-called’ golden flower’ fungus E. cristatum.
