咀嚼脆裂声音与食品脆性的关系研究
The relationship for the voice chewing embrittlement and food brittleness
【摘要】 使用AR854型声级计对花生、胡萝卜、薯片、饼干、榨菜在人咀嚼破碎时产生的声音信号进行采集,获取声波的变化曲线以及落峰时间、咀嚼周期和差值3个特征参数,并与样品脆性感官综合评价进行相关性分析和多元回归分析。结果表明:差值与感官评分具有极显著的相关性,相关系数为0.900以上,可以满足脆性测试精度要求。声波检测方法客观准确,简单易行,可以为食品脆性测试提供新方法。
【Abstract】 Using type AR854 sound level meter to peanuts, carrot, potato chips, cookies, pickle when people chew broken voice signal acquisition, to obtain the change of acoustic curve and peak time, chewing cycle and the difference of three characteristic parameters, and brittle sensory evaluation to the sample correlation analysis and multiple regression analysis. Results showed that the difference had the extremely significant correlation with sensory score, the correlation coefficient of 0.900 above, could satisfy the brittleness test accuracy. Acoustic detection method was objective and accurate, simple and feasible, could provide new methods for food brittleness test.
