不同基质培养下秀珍菇中蛋白质营养价值评价
Nutritive evaluation of Pleurotus Geesteranus cultivated by different base
【摘要】 测定了不同基质栽培的秀珍菇中氨基酸含量。采用国际通用的评价方法对秀珍菇蛋白质营养价值进行评价。实验结果表明:中药渣基质栽培的秀珍菇氨基酸种类齐全,必需氨基酸含量高,占氨基酸总量的43.7%,高于高粱壳栽培的秀珍菇中必需氨基酸含量,其E/T约高于世界卫生组织(WHO)和联合国粮农组织(FAO)提出的40%;且秀珍菇中蛋白质的氨基酸评分(AAS)、化学评分(CS)和氨基酸比值系数分(SRC)也较高,分别为115.1、73.3和89.13,其必需氨基酸模式与人体必需氨基酸的模式接近,属优质蛋白质食品。
【Abstract】 In presented paper, the amino acid in Pleurotus Geesteranus cultivated by different base was determinted and the nutritive value of the protein in Pleurotus Geesteranus was evaluated using Bano and FAO, which were widely used method in all world. Results showed that most types of the amino acids were contained in Pleurotus Geesteranus cultivated by traditional Chinese drug residue and their content were much more than those cultivated by Sorghum shell: the content of the essential amino acids reached to 43.7%. Furthermore, the values such as ASS, CS and SRC in Pleurotus Geesteranus cultivated by traditional Chinese drug residue arrived at 115.1, 73.3 and 89.13, respectively. Those results suggested the Pleurotus Geesteranus cultivated by traditional Chinese drug residue was a superior food, which supplied the amino acids for mankind.
