【摘要】 试验以人参多糖为主要原料研制人参多糖保健饮料,并对其防辐射功效进行研究。正交试验结果表明,人参多糖饮料的最佳工艺配方为(以1 000 mL饮料计):人参多糖添加量40 g,蜂蜜添加量25 g,白砂糖添加量50 g,柠檬酸添加量0.6 g,山梨酸钾添加量0.2 g。在此试验条件下制得的产品感官评分为89.7,人参多糖饮料颜色黄棕色、酸甜可口、滋味柔和,人参多糖的芳香与蜂蜜的香味相互融合。通过体外自由基清除能力研究以及对辐射诱导氧化损伤小鼠体内LDH活性影响和骨髓微核发生率影响的研究,结果表明制备的人参多糖饮料具有防辐射功效。更多还原

【Abstract】 Taking Ginseng polysaccharides as the main raw material to develop Ginseng polysaccharide health drink,test its anti-radiation effect.Orthogonal test results show that the optimum recipe for Ginseng polysaccharides drinks(1 000 mL drink as a unit) is as follows:Ginseng polysaccharide dosage of 40 g,honey dosage of 25 g,sugar dosage of 50 g,citric acid added in an amount 0.6 g,potassium sorbate dosage of 0.2 g.Under test conditions,the product obtained sensory score is 89.7,Ginseng polysaccharide beverage has color of yellow brown;It tastes sour-sweet and soft;It mixes aroma of Ginseng polysaccharide and flavor of honey.The study on free radicals scavenging activities in vitro and the change of LDH activities and the incidence of micronuclei in bone morrow caused by radiation induced oxidative injury in mice suggested that the prepared ginseng polysaccharide beverage had radio protective effect.更多还原
