【摘要】 石榴为桃金娘科番石榴属植物,其营养和药用价值丰富,在我国种植范围较广,由于地域和气候等原因,不同产地石榴的营养品质往往差异较大。为比较不同产地石榴的品质差异和加工适用性,试验以新疆和田、喀什和陕西临潼的成熟石榴为研究对象,分别分析了不同产地石榴皮、石榴果肉隔膜、石榴果肉和石榴籽中的水分、总酸、还原糖、总糖、维生素C、灰分、总酚含量及DPPH自由基清除率,通过方差和因子分析研究了不同产地石榴的品质差异。试验结果表明:不同产地石榴水分含量差异不显著(p>0.05),总酚和VC含量差异显著(p<0.05),石榴不同部位水分、还原糖、总糖、总酸和VC含量差异显著(p<0.05);通过水分、还原糖、总糖、总酚和自由基清除率可知,新疆和田、喀什石榴的甜度和抗氧化活性要好于陕西石榴。更多还原

【Abstract】 Pomegranate is myrtle guava genera plant,its rich nutritional and medicinal value are with wider range of planting in our country,but in different areas pomegranate as a result of the limitation of its geography and climate,its nutritional quality difference is bigger. For the study of pomegranate and different regions differences and applicability of the different parts of the quality,using Xinjiang Hotan,Kashi and Shaanxi Lintong mature pomegranate as experimental object,analyze pomegranate from different origin pomegranate peel,pomegranate pulp diaphragm pulp and the moisture in pomegranate seeds,total acid,reducing sugar,total sugar,vitamin C,ash content,total phenolic content and DPPH free radicals clearance,and using factor analysis and variance analysis,study the quality and the main influence component of pomegranate of different parts from different regions. The experimental results show that different regions pomegranate moisture content difference is not significant(p>0.05),total phenol and VC content significant difference are significant(p<0.05); Pomegranate different parts of the moisture content,reducing sugar,total sugar,total acid and VC content of different parts have the significant difference(p<0.05),and with moisture content,reducing sugar,total sugar,total phenol and free radical clearance can evaluate pomegranate nutritional properties. Xinjiang Hotan and Kashgar pomegranate sweetness and antioxidant activity are better than pomegranate in Shaanxi province.更多还原
