微生物中性蛋白酶在食品工业的最新进展及应用前景
Recent Application Advance and Prospect of Neutral Protease on Food Industry
【摘要】 中性蛋白酶是一类在中性pH条件下催化蛋白质肽键水解,将蛋白质分解为多肽及游离氨基酸的酶类;是最早被人类应用于工业化生产的酶制剂之一。详细综述了微生物产中性蛋白酶在食品工业中的最新进展及应用前景。
【Abstract】 Neutral protease is a kind of enzyme which can hydrolyze protein into polypeptide and FAA at condition of neutral pH. Neutral protease is one of enzyme which has been firstly applied in food industry. In this study, the market outlook and application advance of microbial neutral protease on food industry was summarized according to current study.
