野生与养殖半刺厚唇鱼肌肉营养成分比较分析
Analysis of nutrition in the muscle of wild and cultured Acrossocheilus hemispinus
【摘要】 本试验采用生化分析方法,对野生和养殖半刺厚唇鱼肌肉常规营养成分、氨基酸含量进行测定和分析比较。结果表明:野生半刺厚唇鱼肌肉中粗脂肪含量显著低于养殖半刺厚唇鱼(P<0.05),水分、粗蛋白质和粗灰分含量两者差异不显著(P>0.05)。野生和养殖半刺厚唇鱼肌肉中均检测出18种氨基酸,野生半刺厚唇鱼氨基酸总量和必需氨基酸总量均显著高于养殖群体(P<0.05),而4种鲜味氨基酸总量差异不显著(P>0.05)。野生和养殖半刺厚唇鱼肌肉中必需氨基酸的氨基酸评分值(AAS)均接近或大于1,化学评分值(CS)均接近或大于0.5,必需氨基酸指数分别为79.83和73.20。氨基酸平衡性分析结果表明,半刺厚唇鱼氨基酸组成符合FAO/WHO标准,具有较好的平衡性,蛋白质品质较好。研究表明,半刺厚唇鱼的营养价值较高,是较优经济鱼类,养殖半刺厚唇鱼的营养价值仍然有提升空间。
【Abstract】 In order to compare the differences of muscle nutrients between wild and cultured Acrossocheilus hemispinus,the amino acid composition and common nutrient composition in muscle of wild and cultured Acrossocheilus hemispinus were determined by biochemical analysis methods.The results showed that the content of crude fat in muscle of wild Acrossocheilus hemispinus was significantly lower than that of cultured Acrossocheilus hemispinus(P < 0.05).There were no statistical difference in moisture,crude protein and ash contents in fresh muscle between wild and cultured Acrossocheilus hemispinus(P > 0.05).A total of 18 amino acids were detected in muscles of Acrossocheilus hemispinus,and the contents of total amino acids and essential amino acids in muscle of wild Acrossocheilus hemispinus were significantly higher than those of cultured Acrossocheilus hemispinus(P < 0.05).There had no significant difference of 4 delicious amino acid in wild and cultured Acrossocheilus hemispinus.The amino acid score(AAS) of wild and cultured Acrossocheilus hemispinus were close to or greater than 1,chemical score(CS) were close to or greater than 0.5.The essential amino index(EAAI) of wild and cultured Acrossocheilus hemispinus were 79.83 and 73.20,respectively.The balance of amino acid analysis results showed that the amino acid composition of Acrossocheilus hemispinus conforms to the FAO/WHO standard,and it had good balance and good protein quality.Acrossocheilus hemispinus had high nutritional value and it was better economic fish.The nutritional value of cultured Acrossocheilus hemispinus could be improved.
