攀枝花市2015年食品中重要食源性致病菌污染监测与分析
Contamination monitoring and analysis of important foodborne pathogens in food of Panzhihua city in 2015
【摘要】 目的了解攀枝花市主要食品中重要食源性致病菌的污染状况,为食品安全风险评估和预防食源性疾病提供科学依据。方法在全市5个区县抽查肉制品(包括生畜肉、生猪肉)、水产品、流动早餐3类食物样品共225份,按照2015年《国家食品污染物和有害因素风险监测工作手册》要求,运用VTEK2 COMPACT全自动细菌鉴定仪对样品进行病原菌鉴定,检测致病菌包括金黄色葡萄球菌、蜡样芽胞杆菌、沙门菌、副溶血性弧菌、霍乱弧菌、致泻性大肠埃希菌及单增李斯特菌。结果从225份样品中共检出食源性致病菌69株(30.67%),其中蜡样芽胞杆菌26株(47.27%),金黄色葡萄球菌20株(11.43%),沙门菌15株(6.67%),副溶血性弧菌6株(12.00%),致泻性大肠埃希菌2株(1.14%);3类食品中病原菌阳性率最高的是流动早餐(50.91%),其次为肉制品(28.33%),第三为水产品(14.00%)。结论攀枝花地区居民消费食品中存在着较为严重的食源性致病菌的污染,其中流动早餐是主要的污染食品;蜡样芽孢杆菌在流动早餐中污染较高,金黄色葡萄球菌在肉制品中污染严重。
【Abstract】 Objective To study the important food-borne pathogens pollution status in the main food in Panzhihua city,providing scientific basis for security risk assessment of food and the food-borne diseases prevention. Methods A total of225 food samples from 5 counties/districts were collected,including 3 kinds of food,meat product( row livestock meat,row pork),aquatic product and mobile breakfast. In accordance with < National Food Contamination and Harmful Factors Risk Monitoring Work Book > of 2015,VTEK2 COMPACT Full-automatic Bacteria Analyzer was used to identify the pathogenic bacteria in the samples. The pathogens included Staphylococcus aureus,Bacillus cereus,Salmonella,Vibrio parahaemolyticus,Vibrio cholerae,diarrheased Escherichia coli and Listeria monocytogenes. Results 69 strains of food-borne pathogenic bacteria were detected from 225 samples. The total detection rate was 30. 67%. Among them,26 strains were Bacillus cereus,the detection rate was 47. 27%; 20 strains were Staphylococcus aurous,the detection rate was 11. 43%; 15 strains were Salmonella,the detection rate was 6. 67%; 6 strains were Vibrio parahaemolyticus,the detection rate was 12. 00%; 2 strains were Diarrheagenic escherichia coli,the detection rate was 1. 14%. Among the 3 kinds of food,the highest positive rate of pathogenic bacteria existed in mobile breakfast( 50. 91%),the second was meat product( 28. 33%),then the aquatic product( 14. 00%). Conclusion There is relatively severe contamination of food-borne pathogenic bacteria existed in food in Panzhihua City. The main contaminated food is mobile breakfast. Bacillus cereus is the main bacteria in mobile breakfast. Staphylococcus aurous is the main bacteria in meat product.
