四倍体泥鳅与大鳞副泥鳅杂交种含肉率及肌肉营养成分分析与评价
Analysis and evaluation of meat content and muscle nutritional components in hybrid of tetraploid Misgurnus anguillicaudatus and Paramisgurnus dabryanus
【摘要】 采用国家标准方法对四倍体泥鳅作父本、大鳞副泥鳅做母本的杂交后代(简称三倍体泥鳅)及野生大鳞副泥鳅的含肉率及肌肉营养成分进行了测定。结果显示:三倍体泥鳅、大鳞副泥鳅的含肉率分别为94.26±0.012%、92.36±0.022%,肌肉中粗蛋白含量分别为18.8%、18.0%;粗脂肪含量分别为3.2%、1.7%;水分含量分别为76.5%、79.0%;总灰分含量分别为1.2%、1.1%;16种氨基酸(色氨酸水解未测、胱氨酸未报告)总含量分别为18.04%、16.59%,其中人体必需8种氨基酸含量分别为8.14%、7.39%,分别占氨基酸总含量的45.12%、44.54%;必需氨基酸含量、必需氨基酸占氨基酸总量的百分比均超过WHO/FAO提出的标准;必需氨基酸指数分别为87.23、82.94;四种鲜味氨基酸的总含量分别为6.90%、6.34%。经比较分析,三倍体泥鳅多项营养指标明显高于大鳞副泥鳅。
【Abstract】 The meat content and muscle nutritional composition of hybrid(triploid Misgurnus anguillicaudatus) of tetraploid Misgurnus anguillicaudatus(♂) and Paramisgurnus dabryanus(♀) were detected according to national standard. The results showed that the meat contents of triploid Misgurnus anguillicaudatus and Paramisgurnus dabryanus were 94.26 ±0.012 % and 92.36 ±0.022 % respectively;the crude protein content in muscle was 18.8%and 18%;The crude fat content in muscle was 3.2 % and 1.7 %;the moisture content was 76.5 % and 79.0 %; the total ash content was 1.2 % and 1.1 %; the total contents of 16 kinds of amino acids( tryptophan was undetected and cystine was unreported) were 18.04 % and 16.59 %, of which 8 kinds of essential amino acids were 8.14 %and 7.39 % respectively, accounting for 45.12 % and 44.54 % of total amino acids. The content of essential amino acids and the percentage of essential amino acids in total amino acids were all higher than the standard proposed by who/FAO; The essential amino acid index was 87.23 and 82.94 respectively. The total contents of four kinds of fresh amino acids were 6.90 % and 6.34 % respectively.The nutritional indexes of triploid Misgurnus anguillicaudatus were significantly higher than that of Paramisgurnus dabryanus.
