【摘要】 对不同性别美国野山鸡肌肉色泽和系水性之间的相关性进行研究和比较分析。选择120 d健康,体重无明显差异的美国野山鸡24只(公母各12只),取胸肌和腿肌样,分析宰后和冷藏48 min、24 h、48 h和72 h时的色泽、含水率和系水性指标并进行相关性分析。结果表明,公野山鸡胸肌亮度(L*)和黄度(b*)与解冻损失率和失水率间存在显著(P<0.05或P<0.01)正相关,而腿肌48 min和48 h的L*与水浴损失间显著(P<0.05)负相关;母野山鸡腿肌48 min、48 h和72 h的L*与解冻损失率和含水率间显著(P<0.05或P<0.01)正相关,而红度(a*)与其存在显著(P<0.05)负相关,且48 h后的腿肌a*和b*与滴水损失率间显著(P<0.05)正相关。综上所述,美国野山鸡肌肉色泽和系水性之间存在明显的相关性,且与其性别、部位和宰后时间密切相关。更多还原

【Abstract】 The intent of this study was to investigate a correlation between muscle color and water holding capacity of different gender in American wild pheasants.The study was conducted by using 24(12 cocks & 12 hens) 120 d healthy American wild pheasants.Chest and leg muscle color,water boiling loss(WBL),moisture content(MC),water dripping loss(WDL),water loss rate(WLR),thawing loss(TL)were measured and statistically analyzed at 48 min,24 h,48 h and 72 h,respectively.The results showed that there was a positive significant(P<0.05,P<0.01) correlation between the degree of brightness(L*) and the degree of yellowness(b*) in the chest muscle of cock and the thawing loss and the water loss rate,however the brightness(L*) of the leg muscle at 48 min and 48 h was significant(P<0.05)negative correlated with water boiling loss.The brightness(L*) of the dorsiflexion muscle at 48 min,48 h and 72 h was the same as that of thawing loss and water content,and the redness(a*) was negatively correlated(P<0.05),and the muscle color(a*,b*) was significantly higher than that in the control group(P<0.05) which was positively correlated with the significant drip loss(P<0.05).In conclusion,there is a certain correlation between muscle color and water holding-capacity in American wild pheasant and it is significantly correlated with its sex,location and the time of post-slaughter.更多还原
