肉牛宰前运输应激对其血液理化指标及免疫机能的影响

【摘要】 选择20头体质量500kg左右的西门塔尔杂交牛进行试验,研究肉牛宰前运输应激对其血液理化指标及免疫机能的影响。结果表明:与运输前相比,运输后体质量极显著降低(P<0.01),体温极显著升高(P<0.01);血清谷草转氨酶(P<0.01)、肌酸激酶(P<0.05)、乳酸脱氢酶(P<0.05)和碱性磷酸酶(P<0.05)水平均显著升高;血清葡萄糖(P<0.01)和乳酸(P<0.05)含量显著升高;尿素氮、白蛋白、总胆固醇、甘油三酯、牛羟丁酸、非酯化脂肪酸和总蛋白运输前后变化不大(P>0.05),血清pH值、钾、钠、钙及氯离子浓度无显著变化(P>0.05);血清皮质醇水平显著上升(P<0.05),促肾上腺皮质激素及肾上腺素水平运输前后均差异不显著(P>0.05);血清IgM、IgG水平均显著升高(P<0.05),C-反应蛋白(P<0.01)IL-6(P<0.05)和干扰素(IFN-γ)(P<0.05)显著降低,血清IgA、IL-1β和肿瘤坏死因子运输前后均变化不大(P>0.05)。

【Abstract】 The experiment was condarcted to study the effects of preslaughter transportation stress on blood physiological and biochemical indexes and immunity function of beef cattle.Twenty 500kg-BW Simmental crossbred cattles were randomly selected.The results showed that compared with the values before transportation,BW was decrereased(P<0.01),the body temperature was significantly raised(P<0.01);AST(P<0.01),CK(P<0.05),LDH(P<0.05)and ALP were significantly raised.Glu(P<0.01)and Lac(P<0.05)were significantly raised.BUN,ALB,Tc,TG,OHB,NEFA and TP were not changed obviously(P>0.05).pH,K,Na,Ca and CI were not changed obviously.COR was significantly raised(P<0.05),ACTH and EPI were not changed obviously(P>0.05).IgM and IgG were significantly raised(P<0.05),CRP(P<0.01),IL-6(P<0.05)and IFN-γ(P<0.05)were significantly decrereased,IgA,IL-1βand TNF-βwere not changed obviously(P>0.05).
