猴头菇多糖酸水解工艺的研究

【摘要】 对猴头菇多糖酸水解技术进行研究。以水解度和水解物的体外抗氧化活性为指标,采用L9(33)正交实验设计对酸浓度、反应时间和反应温度进行参数优化,最佳工艺条件为:硫酸浓度2mol/L,水解温度80℃,反应时间5h。在这最优条件下,猴头菇多糖的水解度为70.09%,还原力吸光值为0.289,对羟自由基、DPPH自由基和超氧阴离子自由基的清除率为76.91%、96.01%、37.89%。研究结果初步证明猴头菇多糖水解产物是一种重要的活性物质,为猴头菇的深加工利用和提高附加值提供了新途径。

【Abstract】 Acid hydrolysis of Hericium erinaceus polysaccharide was studied. Adopting L9(33)orthogonal design optimized acid concentration,reaction time and temperature parameters,using the degree of hydrolysis and antioxidant activity of hydrolyzate in vitro as indicators. Sulfuric acid concentration of 2mol/L,hydrolysis temperature at 80℃,reaction time 5h were the best conditions. These conditions resulted in a degree of hydrolysis of polysaccharides Hericium of 70.09%,reducing power absorption of 0.289,the hydroxyl radical,DPPH radical and superoxide anion radical scavenging of 76.91%,96.01%,37.89%,respectively. The results indicate that the Hericium erinaceus polysaccharide hydrolysates was an important bioactive substance. The study helps further processing and utilization of pumpkin,and adds new value onto the pumpkin.
