大曲中微生物及代谢产物的安全性验证
Safety verification of microbial and metabolic products in Daqu
【摘要】 大曲的制备属于开放式自然发酵,生产过程中可能会被污染有潜在风险的微生物,进而影响白酒的质量安全,因此有必要对大曲微生物的安全性进行评价。本研究结合大曲微生物组的研究进展,发现了具有潜在风险的黄曲霉,采用高效液相色谱-串联质谱(high performance liquid chromatography-tandem mass spectrometry,HPLC-MS-MS)以及酶联免疫(enzyme-kinked immuno sorbent assay,ELISA)的方法测定了大曲及白酒生产关键点的黄曲霉毒素残留,并结合危害分析的原则,对有潜在风险的代谢产物组胺和甲醇进行了分析,验证了大曲作为白酒糖化发酵剂的安全性。
【Abstract】 Daquis prepared in an open environment,which may be contaminated by microorganisms with potential risk during the production process,then the quality and safety of final products can be affected.Therefore,it is necessary to evaluate the microbial safety of Daqu.According to research progress of microbial diversity,Aspergillus flavus with the potential risk was found in some kind of Daqu.The aflatoxin in Daquand relative critical points during Baijiu(Chinese liquor)production were determined by HPLC-MS-MS(high performance liquid chromatography-tandem mass spectrometry)and ELISA(enzyme-linked immuno sorbent assay).The results verified that Daquas saccharifying and fermenting agent of Chinese liquor is safe according to the principle of hazard analysis to relative metabolites histamine and methanol.
