2014—2015年许昌市熟肉制品亚硝酸盐含量监测结果分析

【摘要】 目的了解许昌市熟肉制品中亚硝酸盐的含量。方法按照《河南省食品安全风险监测实施方案》的要求,对2014—2015年采集的225份熟肉制品进行亚硝酸盐含量分析。结果亚硝酸盐检出率为79.1%,超标率为13.1%,最大值为400.0 mg/kg。其中散装样品和定型包装样品超标率分别为16.8%、3.4%,2者超标率差异有统计学意义(P<0.010)。结论亚硝酸盐在许昌市熟肉加工中使用普遍,在农贸市场中销售的散装熟肉制品中亚硝酸盐含量超标率较高。超市中销售的定型包装、散装熟肉制品亚硝酸盐含量基本在国家允许使用限值的范围之内,超标的极少。

【Abstract】 Objective To understand the results of nitrite content monitoring of cooked meat in Xuchang City,2014-2015. Methods In accordance with the "Henan food safety risk monitoring plan", 225 samples of cooked meat products were collected and their nitrite contents were detected from 2014 to 2015. Results Thenitrite detection rate was 79.1%, the over standard rate was 13.1%, and the maximum was 400.0mg/kg. The over standard rates were 16.8% and3.4% in the bulk samples and packaged samples respectively(P <0.010). Conclusion Nitrite was widely used in cooked meat processingin Xuchang City, and the over standard rate is high in the farmer’s markets but it is low in thepackaged products of supermarkets.
