2006-2011年厦门市居民面制食品中铝的暴露评估

【摘要】 目的了解厦门市面制食品中铝污染的状况,并评估居民的铝暴露情况。方法对2006-2011年厦门市市售面制食品中铝的含量进行监测,结合2010年厦门市居民膳食消费量调查结果,评估居民面制食品中铝的暴露量。结果141份样品铝含量范围为5.53~882.00 mg/kg,中位数(P25,P75)为57.90(19.80,339.00)mg/kg。厦门市居民平均每周从面制食品中摄入的铝为0.92 mg·kg-1·bw-1,占暂定每周可耐受摄入量(PTWI)的46.0%;高端消费人群(面制食品消费量第90百分位数)每周面制食品中铝暴露量为2.17 mg·kg-1·bw-1,占PTWI的108.5%。结论目前厦门市居民面制食品中的铝暴露量存在安全隐患,需要切实加强面制食品的监督管理,降低面制食品中铝含量。

【Abstract】 Objective To investigate the contamination of aluminum in flour products in Xiamen City and to evaluate its risk on Xiamen residents. Methods We evaluated Xiamen residents’ aluminum exposure from flour products through monitoring the content of aluminum in flour products in Xiamen City during 2006- 2011 and surveying dietary intake of Xiamen residents in2010. Results One hundred and forty- one samples of flour foods were tested. The range of the aluminum content was between 5. 53 mg / kg and 882. 00 mg / kg,with the median( P25,P75) of 57. 90( 19. 80,339. 00) mg/kg. The average aluminum intake from flour products per week in Xiamen residents was estimated to be 0. 92mg·kg- 1·bw- 1,accounting for 46. 0% of the provisional tolerable weekly intake( PTWI). The aluminum exposure from flour products per week in the population with flour-based food consumption at 90 th percentile was estimated to be 2. 17mg·kg- 1·bw- 1,accounting for 108. 5% of the PTWI.Conclusions The aluminum exposure from flour products poses a safety hazard to Xiamen residents. It is necessary to strengthen the supervision and management of flour products so as to reduce the aluminum content of the flour products.
