响应面法优化杏鲍菇护色工艺的研究
Optimization of anti-browning of Pleurotus eryngii using response surface methodology
【摘要】 以杏鲍菇为研究对象,采用多元统计方法(响应曲面法)对其护色工艺进行优化,以改善杏鲍菇加工制品的表观色泽。基于影响杏鲍菇色泽的单因素试验,选择护色剂浓度、护色时间、护色温度、料液比4个主要影响因素作为自变量,反映杏鲍菇褐变的L值为响应值,采用Central Composite试验设计方法,研究各自变量及其交互作用对L值的影响,利用Design Expert软件得到回归方程的预测模型并进行响应面分析。研究结果确定护色的最佳条件为:护色剂柠檬酸的浓度为0.44%、护色温度85℃、护色时间4 min、料液比0.28 g/m L,在此工艺条件下,杏鲍菇的L值为83.30,与理论相对误差为0.395%。
【Abstract】 In this paper,using multivariate statistical methods(RSM) anti-browning of Pleurotus eryngii technology was optimized in order to improve the apparent of Pleurotus eryngii processing products.According to effects of single factor test,four main factors about anti-browning agent concentration,temperature,time,ratio of material to liquid were variables,and L values were response value.The experimental design method of central composite was used to study effects of each variable and their interactions on the L value.The prediction model of regression equation by using Design Expert software was analyzed by response surface analysis.The result showed that the optimum conditions of antibrowning were that concentration of citric acid 0.44%,temperature 85 ℃,time 4 min,ratio of solid to liquid 0.28 g/m L.Under this condition,Pleurotus eryngii L value was 83.30,and relative error compared with the theory was 0.395%.
