【摘要】 对林地遮阳网栽培侧耳、红侧耳、金顶侧耳3种侧耳的常规营养成分、氨基酸和矿质元素进行分析比较,旨在为更好地开发利用林地食用菌资源以及为进行深加工提供参考。采用常规营养成分测定水分、粗纤维、还原糖、粗多糖、粗脂肪、粗蛋白质含量;用日立L 8900型氨基酸自动分析仪测定氨基酸,测定出3种侧耳中16种氨基酸;用原子吸收方法对这3种侧耳中所含的矿质元素铁、锰、铜、锌、磷、钠、钾、钙、镁的含量进行测定。结果表明,3种侧耳在林地遮阳网中生长下产生很高的营养成分,均是高蛋白、高纤维、低脂肪、高钾低钠的食用菌,营养价值较好,食用口感良好。通过对试验数据的方差分析,发现3种侧耳在常规营养成分、氨基酸和矿质元素之间差异性不显著。更多还原

【Abstract】 In this paper,black shading net woodland shade cultivation pleurotus ostreatus,pleurotus djamor,pleurotus citrinipileatus sing three kinds of basic nutrition composition,amino acids and mineral elements were analyzed and compared,general nutrients which the determination of moisture,crude fiber,sugar,polysaccharides,crude fat,crude protein content;Hitachi L 8900 model automatic amino acid analyzer was used to amino acid and three kinds of ear in 16 kinds of amino acids;Atomic absorption photometry assay was used to determine mineral elements(Fe,Mn,Cu,Zn,P,Na,K,Ca,Mg)in the extract of pleurotus ostreatus. Through analysis of variance,there is no significant difference on the general nutrients,amino acids and mineral elements of the three species of pleurotus ostreatus.更多还原
