林蛙油组分蛋白的制备及其抗氧化活性研究
Study on Preparation and Antioxidant Activity of Oviductus ranae with Different Components of Protein
【摘要】 制备水溶蛋白、盐溶蛋白、醇溶蛋白和碱溶蛋白四种林蛙油可溶性组分蛋白,研究其抗氧化活性,并与VC进行比较。结果显示,当组分蛋白浓度为10.0 mg/mL时,水溶蛋白对DPPH·清除能力最强,与0.01 mg/mL VC基本相当,四种组分蛋白对羟自由基的清除能力较强,高于0.01 mg/mL VC。当浓度为0.01~1.0 mg/mL时,水溶蛋白和盐溶蛋白对脂质体氧化抑制能力明显高于VC。试验看出水溶蛋白和盐溶蛋白抗氧化活性较好,具有成为天然抗氧化剂的潜力,为林蛙油的开发与利用提供理论依据。
【Abstract】 The antioxidant activities of four soluble component protein separated from Oviductus ranae, including water-soluble protein, salt-soluble protein, gliadin, alkali-soluble protein were evaluated by the antioxidant activity experiment, and compared with VC. The results indicated that when the component protein concentration was 10.0 mg/mL, the ability of DPPH·free radical scavenging of water-soluble protein was the most effectively, which was the same as the 0.01 mg/mL VC. The ability of hydroxyl free radical scavenging of the four soluble proteins was higher than that of 0.01 mg/mL VC. When the protein concentration was from 0.01 mg/mL to 1.0 mg/mL, the liposome oxidation inhibition ability of water-soluble protein and salt-soluble protein were significantly higher than that of VC. The study showed the water-soluble protein and salt-soluble protein of Oviductus ranae had stronger antioxidant activity, and they had the potential of natural antioxidant. The theory basis was provided to further research and usage of Oviductus ranae.
