【Abstract】 Needle mushroom and almond of high quality are used as raw material together with honey and other auxiliary material to develop a compound health beverage. Single factor experiments and orthogonal tests are applied to determine the optimal formula of the beverage. The results showed the optimal formula as follows: the ratio of needle mushroom sauce to almond pulp of 1∶1.5 with 30% of the the mixed juice;honey 4%;white granulated sugar 8%;citric acid 0.15%;sodium citrate 0.05%;the ratio of sodium alginate to yellow gum of 2 ∶1 with 0.15% of the mixture.
