包装方式对冷鲜羊肉微生物的影响
Effect of packaging method on microorganism of chilled mutton
【摘要】 本实验以挥发性盐基氮为指标,结合16S r DNA V6-V8可变区聚合酶链式反应-变性梯度凝胶电泳指纹图谱技术(PCR-DGGE)研究在4℃贮藏条件下,不同包装对冷鲜羊肉影响优势腐败菌动态变化。结果表明:托盘包装第6天时其菌落总数为6.12 cfu/g,TVB-N为26.43 mg/100g,优势腐败菌为大肠杆菌、巨球菌、乳酸菌属;真空包装第12天时其菌落总数为5.97 cfu/g,TVB-N为20.52mg/100g,优势腐败菌为假单胞菌、葡萄球菌、乳酸菌和肠杆菌;吸水纸真空包装第18天其菌落总数为6.11cfu/g,TVB-N为23.49mg/100g,优势腐败菌为假单胞菌、乳酸菌、嗜冷杆菌和肠杆菌。
【Abstract】 The total volatile basic nitrogen( TVB- N) was taken as the index. Combined with 16 S r DNA v6- v8 variable region of polymerase chain reaction- denaturing gradient gel electrophoresis fingerprinting technology( PCR- DGGE),effects of different packaging on the dominant spoilage bacteria dynamic changes of chilled mutton stored at 4℃ was studied. The results showed that the colony count was 6. 12 cfu / g,and TVB- N was 26. 43 mg /100 g on the sixth day in the tray packaging. And the dominant spoilage bacteria were escherichia coli,bacillus and lactobacillus. On the twelfth days in vacuum packaging the colony count was 5. 97 cfu / g,and TVB- N was 20. 52 mg /100 g. At the same time the dominant spoilage bacteria was pseudomonas,staphylococcus,lactobacillus,escherichia coli. In absorbent paper vacuum packaging the colony count was 6. 11 cfu / g,and TVB- N was 23. 49 mg /100 g,and the dominant spoilage bacteria was pseudomonas,lactobacillus,psychrobacter and escherichia coli on eighteenth days.
