【Abstract】 The alcohol degree and total ester content from each batch of the fermented grains from brewing workshop in Yanghe Distillery Co. Ltd. during 2014 to 2015 were detected and compared with the corresponding liquor yield and high quality rate. The correlation between alcohol degree and liquor yield and high quality rate, as well as the relationship between the total ester content and the quality of high grade liquor was analyzed to provide a significant guidance for liquor making and liquor selection.更多还原
