露那辛功能肽的研究进展

【摘要】 露那辛(Lunasin)是由大豆2S清蛋白(Gm2S–1)基因中的一段编码的功能肽段,由43个氨基酸残基组成,分子量为4.8 k Da。研究表明,露那辛功能肽具有抗癌、抗氧化、抗炎症及降低体内胆固醇等生物活性。综述了近年来露那辛功能肽在来源、分离、鉴定及生物活性等方面的研究进展,展望了露那辛功能肽在大豆及谷物食品加工中的应用。

【Abstract】 Lunasin encoded within 2S albumin(Gm2S–1)gene of the soybean was a functional peptide.It was composed of 43 amino acid residues with a molecular weight of 4.8 k Da.Extensive scientific studies showed that lunasin possessed anticancerous,antioxidative,anti–inflammatory properties and could also reduce content of cholesterol.Advances of lunasin in sources,isolation,identification,and biological activities were summarized,and applications of lunasin in food processing of soybean and cereal in the future were pointed out.
