香型指数在烤烟原料香型分析中的应用

【摘要】 为了考察烟叶原料的香型风格,收集了不同烟叶产区的烟叶样品,采用12个香型特征指标的感官评价结果,对清香型、浓香型和中间香型3类烟叶样品的特征表达方法进行了研究。通过对感官评价指标的主成分分析,绘制主成分得分-载荷图,得到了清甜香、蜜甜香和焦甜香3个决定烟叶样品特征的重要指标,并且样品可分为清香型、中间香型和浓香型3组样品;通过对主成分空间的旋转变换,定义了清香型指数、中间香型指数和浓香型指数,可用于样品特征的定量描述及不同样品香型风格的定量比较;烟叶样品在香型指数三维空间的分布表明,从清香型到中间香型再到浓香型的变化依次为云南、福建、江西、四川、重庆、贵州、山东、黑龙江、湖北、陕西、湖南、安徽、广东、河南。

【Abstract】 In order to evaluate the aroma type of raw tobacco materials,flue-cured tobacco leaves from different origin were collected and sensory evaluation of these materials was performed using 12 flavor feature parameters. By principal component analysis( PCA) of the sensory evaluation data,the clustering of the samples was investigated and the significant parameters were identified. Through the mathematical rotation operation on the score and loading obtained by PCA,aroma index,i. e.,light flavor index,neutral flavor index and strong flavor index,were defined and calculated. The results showed that the three aroma indices could be used for quantitative description of the flavor features of the samples. Determination of the aroma type for a sample and quantitative comparison between the samples could also be achieved using the aroma indices. Furthermore,the relationship between the samples and the variation along the origins were investigated using the three aroma indices. The area changement order of light flavor type,neutral flavor type,and strong flavor type is Yunnan,Fujian,Jiangxi,Sichuan,Chongqing,Guizhou,Shandong,Heilongjiang,Hubei,Shaanxi,Hunan,Anhui,Guangdong and Henan.
