【Abstract】 The topic is introduced from the presence of sugars in nature. Sugars are inexhaustible natural resources as well as playing important roles in the cycle of ecological environment. In addition to consumption for people’s livelihood, sugars are also the raw material of light industry, food, chemical, pharmaceutical, energy and other industrial production. It is pointed out that sugars are renewable resources, but must be reasonable used, give full play to its wholesome effect; it is of great realistic meaning to the sustainable development of sugar industry and ecological environmental protection.
