东北地区红树莓果渣的营养成分分析

【摘要】 以东北地区的菲尔杜德、欧洲红、宝石红、哈瑞太兹、秋福、野生果6种红树莓果实加工后的果渣为试验材料,采用国标法对其营养成分进行分析测定。结果表明,不同品种红树莓果渣中营养成分存在一定差异,秋福果渣中水分、总酸和脂肪含量最高,分别为72.63%、13.58%和14.14%;哈瑞太兹果渣中总糖含量最高,为12.76%;欧洲红果渣中粗蛋白含量最高,为3.54%;菲尔杜德果渣中粗纤维含量最高,为48.45%;野生果果渣灰分含量最高,为2.06%。红树莓果渣中富含K、Ca、Mg、Fe、Zn等矿物质元素;氨基酸种类齐全,含量丰富,其中Lys、Leu、Asp、Ser、Ala、Cys、Phe、Arg含量较高;总氨基酸含量最高的为秋福果渣,为7.87%。研究表明,红树莓果渣的营养价值较高,具有很好的开发应用前景。

【Abstract】 Nutritional components were analyzed in 6different varieties of Rubus ideaus pomaces grown in northeast China.Results showed that the highest contents of moisture,total acid and fat were determined in Au-tumn Bliss pomace,which were up to 72.63%,13.58%and 14.14%,respectively.The highest content of total suger was detected in Heritage pomace reached to 12.76%.The European red raspberry pomace was found to have the highest content of crude protein reached to 3.54%,and there was the highest content of crude fiber which was up to 48.45%in Fertod Zamatos pomace.In addition,the Wild Rubus ideaus pomace was discovered to contain the richest content of ash that climbed to 2.06%.Higher contents of potassium,calcium,magnesium,iron and zinc among minerals were determined in red raspberry pomaces where the amino acid were also complete and particularly abundant in the amounts of Lys,Leu,Asp,Ser,Ala,Cys,Phe and Arg,and specially in Au-tumn Bliss pomace there was the highest content of total amino acid discovered at the level of 7.87%.Conclusively,Rubus ideaus pomaces are so plentiful in nutritional value that it has promising prospects for further development and utilization.
