一起误食乌头碱引起的食物中毒调查
Investgation of one incident food poisoning caused by erroneous eating aconitine
【摘要】 目的调查分析一起误食引起的食物中毒事件的原因,为制定防控措施提供科学依据。方法使用统一的《食物中毒事件个案调查登记表》对中毒患者进行调查,对中毒现场进行卫生学调查。共采集加工原料、残留样品、退货样品、中毒患者擦拭样品等47份送实验室检测。结果 3份黑芝麻糊粉样品检出乌头碱阳性,其乌头碱含量为0.13 mg/kg~142 mg/kg。以该样品进行动物急性染毒实验,均出现呕吐、抽搐等神经系统症状,其中1只死亡。WDM摊位样品中也检出较高含量的乌头碱。在11个农贸市场采集的23份黑芝麻糊粉及黑豆样品均未检出乌头碱。结论根据现场流行病学调查,结合临床表现、实验室检测和动物实验,判定这是一起误食乌头碱引起的食物中毒事件。为避免此类食物中毒事件的再次发生,应当加强食品卫生安全监督、管理和食品安全知识的宣传教育工作,建立有效的政府监管机制,同时食品经营商家也应加强自律。
【Abstract】 Objective To investigate the reason of an incident food poisoning caused by erroneous eating,so as to provide scientific basis for formulating prevention and control measures. Methods The poisoning sufferers were investigated using the Registration Form of Food Poisoning Case Study. Hygienic investigation was conducted in the scene of poisoning. Up to 47 processing raw materials,the remaining samples,return samples and wipe samples of poisoning patients were collected and sent to the laboratory for test. Results Aconitine were detected in 3 samples of the black sesame- seed powder,with the doses of aconitine among 0. 13 mg / kg- 142 mg / kg. The animal experiment of acute infection showed the nervous system symptoms such as vomiting,convulsions,and one of the mice was dead. Higher concentration of aconitine were also found in the samples of WDM stall. However,aconitine was not found in twenty- three samples of black sesame- seed powder and black bean collected from eleven markets. Conclusion According to field epidemiological investigation,as well as the clinical manifestations,laboratory tests and animal experiments,this was a food poisoning caused by erroneous eating aconitine. To prevent this kind of food poisoning,the measures should be taken to strengthen the food safety supervision,management and the propaganda of food safetyand the establishment of an effective government regulation mechanism. Meanwhile,food business merchants should strengthen self- discipline.
