【摘要】 目的了解无锡市餐饮业食品卫生状况,以便有针对性地制订食品安全监管措施,为开展卫生监督工作提供科学依据。方法按照《健康相关产品国家卫生监督抽检规定》和卫生操作规范进行采样和检验,根据食品安全标准、卫生计生委等部门的公告评价检测结果。结果 2014年无锡市卫生监督所餐饮食品抽检结果显示,部分食品由于制作过程涉及污染带入、操作不规范、生产环境、运输存放和非法添加等因素,容易出现不合格现象;部分食品在制作过程中存在卫生安全隐患。结论应采取综合措施加强对餐饮单位的监督管理,并加强抽检工作。更多还原

【Abstract】 OBJECTIVE To understand the hygienic status of catering industry food in city of Wuxi, make specific measures of super-vision of food safety and provide scientific basis for health supervision. METHODS According to the"samplings related health prod-ucts of National Health Supervision Regulations"and sanitary operation specification,sampling and inspection, according to the foodsafety standards, health and family planning commission and other departments of the announcement of evaluation results. RESULTS The results of health supervision of food sampling of Wuxi in 2014 showed that, because of the involving pollution, irregular opera-tion, the production environment, transport and storage, illegally added factors, some food were prone to be unqualified; some foodhad safety risk in the process of production. CONCLUSION Comprehensive measures should be taken to strengthen the supervisionand management of catering units, and work sampling also should be enhanced.更多还原
