石油污染对海洋贝类食品安全性影响研究进展

【摘要】 石油污染对海洋环境造成危害,并在海洋生物体中富集积累,对海产品质量安全造成不利影响。海洋贝类因其特殊的生活习性和摄食途径,对石油烃有着高度的富集能力。开展石油对海洋贝类质量安全的影响研究具有重要意义。本文对海洋石油污染的原因及现状、石油烃的检测方法、贝类对石油烃的富集与释放、石油烃安全限量等研究进行综述,以期为从事食品安全监管和科研的相关人员提供参考。

【Abstract】 Marine oil pollution not only does harm to the marine environment,but also its hazardous substances could be accumulated in marine organisms and have adverse effects on the quality and safety of seafood. Due to the special way of living and feeding,marine shellfish has a high accumulation capacity on petroleum hydrocarbon. In order to provide some references for food safety supervisors as well as relevant researchers,this paper summarized the causes and status of marine oil pollution,introduced the component of oil and its detection methods,analyzed the regularity of bioconcentration and elimination of petroleum hydrocarbon by marine shellfish,and reviewed the safety limit of petroleum hydrocarbon in shellfish.
