2007-2013年河南省保健(功能)食品微生物检测结果分析及评价

【摘要】 目的了解河南省保健(功能)食品微生物污染情况。方法对2007-2013年受理的保健(功能)食品按GB/T4789或GB4789方法检测菌落总数、大肠菌群、霉菌、酵母菌和致病菌。结果七年检测保健(功能)食品2 256份,总合格率92.77%,以2013年最高(96.84%),年度间差异有统计学意义(P<0.05);各种原料来源保健(功能)食品中,营养补充剂类合格率最高,动、植物类较低,各种剂型保健(功能)食品中,片剂合格率最高,丸剂最低,差异均有统计学意义(P<0.01);四项微生物指标检出率、超标率均以菌落总数最高,酵母菌最低,差异均有统计学意义(P<0.01),其中,植物类、丸剂保健(功能)食品菌落总数和霉菌的检出率、超标率均最高;致病菌未检出。结论河南省连续七年受理的保健(功能)食品合格率有所提高,但仍存在一定的微生物污染,植物类和丸剂保健(功能)食品菌落总数超标和霉菌污染是保健(功能)食品污染的主要原因。

【Abstract】 Objective To get to know the microbial contamination situation of health(function) foods in Henan. Methods Detect bacterial colony forming units, coliforms, molds, yeasts and pathogens according to GB 4789 or GB/T 4789. Results The overall rate of passing the national standards is 92.77% for all the foods. The highest passing rate occured in 2013 with 96.84%. There are significant differences(P<0.05) between 7 years. Nutrient additives have the highest passing rate of raw materials, followed by animal foods and plant foods. Tablets have the highest passing rate of forms, while pills have lowest passing rate, with significant form differences(P<0.01) between 5 forms. The highest rate of detection and over the standards is from bacterial colony forming units and the lowest is from yeasts with significant microbial category differences(P<0.01) between 4 categories. The rates of detection and exceeding the standards of bacterial colony forming units and molds are highest for plant and pill health(function)foods. No pathogens are detected. Conclusion Bacterial colony forming units and molds are main microbial contamination for plant and pill health(function) foods, although the overall rate of passing the standards gradually got higher for the examined health(function) foods in Henan during the 7 years.
