南极红色素与3种天然色素还原性和抗氧化性对比研究

【摘要】 探讨南极红色素、胭脂虫红色素、紫甘蓝色素、紫苏色素的还原性和抗氧化性。结果表明,4种天然色素都具有一定程度的还原性和抗氧化性。浓度为1 mg/m L时,超氧阴离子清除率分别为26.52%、20.51%、15.32%、30.65%;DPPH自由基清除率分别为73.11%、16.23%、94.64%、96.92%;羟基自由基清除率分别为67.31%、42.03%、72.67%、58.37%。具有还原性和抗氧化性的天然色素,特别是真菌色素南极红色素,会有广阔的应用前景。

【Abstract】 The aim of this work was to study the reducing power and antioxidant activity of four natural pigments, which were Antarctic red pigment, cochineal pigment, purple cabbage, folium perilliae. The results showed that they had reducing capacity and antioxidant activity. When the content was 1mg/m L, the maximum scavenging rates on superoxide anion radicals were 26.52 %, 20.51 %, 15.32 %, 30.65 %, the maximum scavenging rates on DPPH were 73.11 %, 16.23 %, 94.64 %, 96.92 %, the maximum scavenging rates on hydroxyl radicals were 67.31 %, 42.03 %, 72.67 %, 58.37 %.Therefore, the nature pigments with antioxidant activity and reducing capacity, especially the fungi pigments Antarctic red pigment, will have broad prospects in application.
