新疆莎车大果榅桲果实营养分析及评价

【摘要】 为评估新疆莎车大果榅桲果实营养价值,对榅桲果实单果重、硬度、蛋白质、还原糖、总酸、总黄酮和膳食纤维、10种矿物质及17种氨基酸的含量进行测定,并对其营养价值进行综合评价和比较。结果表明:榅桲中含人体必需17种氨基酸,人体必需氨基酸量1.06 mg/g,占氨基酸总量34%,接近WHO/FAO提出参考模式标准(40%),第一和第二限制性氨基酸分别为苏氨酸和亮氨酸;榅桲膳食纤维(3.5 g/100 g)和总黄酮(19.08 mg/g)含量高于新疆常见大宗鲜食水果(苹果、梨),而蛋白质含量(0.25 g/100 g)低,味偏酸(糖酸比T=4.49);10种矿质元素中铜(2.05 mg/kg)、钠(5.91 mg/100 g)、镁(8.31 mg/100 g)、钙(10.76 mg/100 g)和钾(133.66 mg/100 g)含量也高于以上其他水果,尤其Ca/P=0.83,接近健康食品Ca/P=1要求;新疆莎车大果榅桲是营养价值较高的仁果类果品,可进一步开发利用。

【Abstract】 The fruit quality indicators such as single fruit weight,fruit hardness,protein,reducing sugar,total acid,flavonoids,dietary fiber,10 kinds of minerals and 17 kinds of amino acids were determined to evaluate the nutritious components of Shache big quince.The results showed that there were 17 kinds of amino acids in Shache big quince among them essential amino-acids were 1.06 mg/g accounting for 34% of total amino acids which close to the WHO/FAO reference model(40%). The first and second limiting amino acidis were threonine(Thr) and leucine(Leu). In comparison with other fruits(apples,pears),Shache big quince had higher flavonoids(19.08 mg/g),dietary fiber(3.5 g/100 g) contens and lower protein contents(0.25 g/100 g) with partial acidic taste(sugar-acid ratio :4.49). Minerals in Shache big quince such as copper(2.05 mg/kg),sodium(5.91 mg/100 g),magnesium(8.31 mg/100 g),calcium(10.76 mg/100 g) and potassium(133.66 mg/100 g)were higher than in other fruits,especially the Ca/P=0.83 closed to healthy food requirement Ca/P =1. Shache big quince was one of the important kernel fruits with highly nutritional value,which could be further developed and utilized.
