水溶性玉米红曲红色素超声波辅助提取工艺研究
Extraction of Water-soluble Corn Monascus Pigment by Ultrasonic Extraction Technology
【摘要】 以玉米红曲为原料,研究超声波辅助提取水溶性玉米红曲红色素的工艺条件。结果表明,水解p H值、液固比、超声功率、提取温度和提取时间对水溶性玉米红曲红色素的提取率影响显著。最佳工艺条件为水解p H值5.5,液固比50∶1,提取温度40℃,超声功率300 W,提取时间25 min,在此条件下提取率为可达70.34%。
【Abstract】 Technology conditions of extracting water-soluble monascus pigment are studed using corn red mould as material.The results show that p H,liquid to solid ratio,ultrasonic power,the hydrolysis temperature and hydrolysis time significantly affected the extraction rate of water-soluble Monascus pigment. The optimal conditions are p H 5.5,liquid to solid ratio 50∶1,the hydrolysis temperature 40 ℃,ultrasonic power 300 W,hydrolysis time 25 min. Under these conditions,the extraction rate can reach 70.34%.
