【Abstract】 Using bamboo shoot as raw material, effects of ammonium sulfate concentration, extraction temperature, ratio of solid to liquid and extraction time on yield of bamboo shoot trypsin inhibitor were analyzed. The conditions of alkali extraction were as follows: solid and liquid ratio of 1 ∶ 2, extraction temperature 75 ℃, extraction time 5 min, ammonium sulfate concentration 650 g/L.
