不同日粮组成对牛肉pH值的影响

【摘要】 为了探讨日粮组成对排酸后牛肉p H值的影响,随机选择健康、月龄、体重相近的44头肉用公牛,随机分成两组,两组中每个动物每日饲喂7 kg麦秸,分别饲喂7 kg(A1)精料补充料和7 kg玉米粉(B1)。另选取同条件的肉牛58头,随机分成两组,两组中每个动物每日饲喂7 kg麦秸,分别饲喂7 kg精料补充料(A2)和10 kg玉米粉(B2)。对两个饲喂不同全混合日粮的育肥牛场的饲料进行了营养成分分析,并分别检测两个育肥牛场出栏的各100头肉牛屠宰排酸后牛肉的p H。结果表明:屠宰前饲喂玉米比饲喂精料补充料可显著降低排酸牛肉的p H,并提高牛肉p H合格率(P<0.05)。两个育肥牛场的TMR成分与排酸牛肉p H的结果对比分析表明,无氮浸出物含量高的TMR育肥的肉牛,牛肉排酸后p H显著降低,合格率显著提高(P<0.05)。

【Abstract】 In order to investigate the effect of different diets on beef p H values,44 healthy beef bulls with similar age and weight were randomly divided into two groups. Each animal was fed 7 kg wheat straw plus 7 kg concentrate supplement( Group A1) or 7 kg corn meal( Group B1). Another 58 bulls were selected and each animal was fed 7 kg wheat straw plus 7 kg concentrate supplement( Group A2) or 10 kg corn meal( Group B2). The nutritional composition of two TMR from two different beef cattle fattening farms was analyzed and p H values of 100 beef samples from the cattle of each farm were tested and compared. The results showed that p H value of beef corn meal were significantly reduced and beef quality in terms ultimate p H was significantly improved compared with supplementation of concentrate supplement( P < 0. 05). Analysis between chemical composition of TMR and corresponding p H value of beef indicated that when TMR with higher nitrogen free extract was fed to the beef cattle,p H value of beef were significantly reduced and beef quality in terms ultimate p H was significantly improved( P < 0. 05).
