两种食品防腐剂与牛血清白蛋白相互作用

【摘要】 运用多光谱技术研究纳他霉素/乳酸链球菌素(natamycin/nisin)与牛血清白蛋白(BSA)间的相互作用.结果表明:natamycin和nisin与BSA间的猝灭机理分别为静态猝灭和联合猝灭.natamycin/nisin绑定BSA位点I从而导致BSA结构变化.此外,计算了这两个绑定反应的结合常数、结合位点数和结合距离.

【Abstract】 The interaction of natamycin / nisin with bovine serum albumin( BSA) has been investigated by multiple spectroscopic techniques. The results indicated that the quenching mechanism between BSA and natamycin or nisin was a static quenching or combined quenching( static and dynamic) process. Natamycin / nisin was primarily bound to site I( subdomain IIA) of BSA,which led to its structural changes. In addition,the binding constants,binding site numbers and binding distance of the two systems were also calculated.
